Strawberry red, that is. Spring months usher in that beautiful ruby across <a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_02.jpg\"><img decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_02-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" class=\"alignright size-thumbnail wp-image-1277\" \/><\/a>California fields and farmers market tables. This year, with all the rain, the berries are big, beautiful and bodacious, and you make room in your life\/schedule\/oven\/fridge for any and all ways to use them.<\/p>\n<p>A couple of years ago, I made strawberry hand pies (see blog entry of July 2014). So spellbound with the juicy nature of berry meeting pastry, I moved on to making larger strawberry pies (and even a crostata), and it dawned on me, after years of eating every <a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_03.jpg\"><img decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_03-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" class=\"alignleft size-thumbnail wp-image-1278\" \/><\/a><br \/>\ntype of pie in the wardrobe, strawberry turned out to be my favorite. There\u00e2\u20ac\u2122s just no better pie. A few rivals come close, but I\u00e2\u20ac\u2122m set on that juicy filling now, for sure, and maybe forever.<\/p>\n<p>That being said, last year, I found myself obsessing over the possibility of making a strawberry cobbler. For awhile, I thought of it night and day, mouth watering. I knew the plump, juicy, sweet berries would be the perfect setting for tender, buttery biscuit drops. <\/p>\n<p><a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_04.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_04-260x300.jpg\" alt=\"\" width=\"260\" height=\"300\" class=\"alignright size-medium wp-image-1279\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_04-260x300.jpg 260w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_04-130x150.jpg 130w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_04.jpg 300w\" sizes=\"(max-width: 260px) 100vw, 260px\" \/><\/a>So while strawberries are always top of the list for pie (and should be), they\u00e2\u20ac\u2122re also likely not common for a cobbler \u00e2\u20ac\u0153filling\u00e2\u20ac\u009d (cobbler recipes are primarily peach, blueberry and apple). I saw no reason why you couldn\u00e2\u20ac\u2122t stew those luscious berries a little, thickening them, and find the best biscuit-y dough to crown this heaven. I thought, the best jam meets the best biscuits, in reverse, or, upside-down, or&#8230;you get it&#8230;<\/p>\n<p>For my cobbler, I used a simple concoction for the filling (including sugar and some thickener) and cooked the berries slightly. My secret ingredient? Orange juice and zest! I love using these to enhance fresh strawberries, fresh or cooked. It brightens the overall flavor and seems highly compatible. <\/p>\n<p><a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_05.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_05-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" class=\"alignleft size-medium wp-image-1280\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_05-300x225.jpg 300w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_05-150x113.jpg 150w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_05-400x300.jpg 400w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_05.jpg 500w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>For my cobbler topping, I adapted a light-as-air drop biscuit recipe, adding some orange zest here also. The dough was dolloped by large spoonfuls into the still warm filling (which had been dotted with a little butter). I had to crowd the biscuit dough in, but I figured, the more, the merrier. I topped the cobbler with some sparkling sugar for a sweet crunchy finish.<\/p>\n<p>The magic of a cobbler is the merging of fruit and biscuit (I\u00e2\u20ac\u2122m still insistent that the biscuit cobbling is the truest version of this dessert). I was delighted to eat a warm bowl of the juicy, jammy fruit melded with its homey, buttery crown, topped off with some good vanilla bean ice cream. It was like an upside-down strawberry shortcake. Only better, if that\u00e2\u20ac\u2122s possible&#8230;<br \/>\n<a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_09.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_09-232x300.jpg\" alt=\"\" width=\"232\" height=\"300\" class=\"alignright size-medium wp-image-1281\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_09-232x300.jpg 232w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_09-116x150.jpg 116w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_09-400x518.jpg 400w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image_09.jpg 500w\" sizes=\"(max-width: 232px) 100vw, 232px\" \/><\/a><br \/>\n<strong>Strawberry Cobbler<br \/>\nServes 6 to 8<\/strong><\/p>\n<p><strong>Filling:<br \/>\n6 cups chopped fresh strawberries<br \/>\n1\/3 cup sugar<br \/>\nPinch of salt<br \/>\n1 tablespoon orange zest<br \/>\n3 tablespoons orange juice<br \/>\n1 tablespoon lemon juice<br \/>\n1 tablespoon King Arthur Flour Instant ClearJel thickening agent or 2 teaspoons flour<br \/>\n2 tablespoons butter cut into small pieces<\/strong><\/p>\n<p>Cobbler:<br \/>\n1\u00c2\u00bd cups all-purpose flour\u00e2\u20ac\u00a81\u00c2\u00bd cups cake flour<br \/>\n\u00e2\u20ac\u00a82 tablespoons sugar<br \/>\n1 tablespoon baking powder\u00e2\u20ac\u00a8\u00c2\u00bd teaspoon baking soda\u00e2\u20ac\u00a81 teaspoon salt<br \/>\n\u00e2\u20ac\u00a88 tablespoons (1 stick) unsalted butter , cut into \u00c2\u00bd-inch pieces and softened\u00e2\u20ac\u00a8<br \/>\n4 tablespoons vegetable shortening , cut into \u00c2\u00bd-inch pieces\u00e2\u20ac\u00a81 tablespoon orange zest<br \/>\n1\u00c2\u00bc cups buttermilk<br \/>\nSparkling sugar<br \/>\n<a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image11.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image11.jpg\" alt=\"\" width=\"200\" height=\"254\" class=\"alignright size-full wp-image-1282\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image11.jpg 200w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2017\/05\/image11-118x150.jpg 118w\" sizes=\"(max-width: 200px) 100vw, 200px\" \/><\/a><br \/>\n<strong>Preheat oven to 400 degrees.<br \/>\nMake filling: In a large saucepan over medium heat, combine strawberries, sugar, salt, orange and lemon juices, zest and thickener or flour. Cook for several minutes, stirring occasionally, until berries release their juices and thicken slightly. Turn off the heat. Pour filling into a buttered 9-inch casserole or deep dish pie pan. Dot with butter.<\/strong><\/p>\n<p><strong>Make cobbler: Combine flours, sugar, baking powder, baking soda, and salt in large bowl. Rub butter and shortening into flour mixture until mixture has a coarse, crumbly texture. Toss in orange zest. Stir in buttermilk until combined.<\/p>\n<p>Drop large spoonfuls of the biscuit dough onto the warm filling (you may have to squeeze it in). Sprinkle with sparkling sugar.<\/p>\n<p>Place cobbler on the middle rack of the oven, and place a foil-lined baking sheet on the lowest rack of the oven to catch any juice that bubbles over.
