If so, it is the plum that has seduced me, once again. Fortunately \u00e2\u20ac\u201d or not, really \u00e2\u20ac\u201d the season is woefully short, but during it, I find myself drawn, again and again, to the stunning array of plums, pluots and plum\/cherry hybrids, gleaming like jewels at the farmers\u00e2\u20ac\u2122 market. They\u00e2\u20ac\u2122re crisp and juicy (not water balloon gishy like many equate plums\u00e2\u20ac\u2122 texture to be), and I eat them sliced on a small plate, dark ruby slivers that remind me of the ones served to me in the same way by the wife of a famous Depression-era photographer I had interviewed years ago in Southern California. <\/p>\n<p><a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6166.jpeg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6166.jpeg\" alt=\"\" width=\"500\" height=\"509\" class=\"alignright size-full wp-image-1774\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6166.jpeg 500w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6166-295x300.jpeg 295w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6166-147x150.jpeg 147w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6166-400x407.jpeg 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>[T]hey\u00e2\u20ac\u2122re so beautiful, they\u00e2\u20ac\u2122re like eating art. They taste, to me, better than any fruit, the most floral and intense and luscious of all (and whose bloom scent still haunts me from childhood). The beautiful variety of colors and tastes of these plums also reminds me of the scars from childhood due to canned plums, which I remember as being darkly colorless, bland and shiny-mushy, like something that just fell out of its shell.<\/p>\n<p>While fresh plums and their kin are good enough to just eat on their own, I am also sometimes gobsmacked by a recipe that makes me willing to relinquish my nightly sensory plate-lette of plums to make something with them. I saw a video from Bon Appetit magazine of a baker named Briana Holt of Tandem Coffee and Bakery in Portland, Maine, making a plum-rosemary crisp that was so enticing I was even inspired to buy spelt flour to make it.<br \/>\n<a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6175.jpeg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6175.jpeg\" alt=\"\" width=\"500\" height=\"656\" class=\"alignright size-full wp-image-1775\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6175.jpeg 500w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6175-229x300.jpeg 229w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6175-114x150.jpeg 114w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/09\/IMG_6175-400x525.jpeg 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a><br \/>\n[S]pelt flour comes from an ancient strain of wheat, said to be lighter and sweeter than other wheats. It is not gluten-free (if that is your concern) and can come in carrying degrees of graininess for baking. Once a bowl of the crumbly topping is assembled, it is recommended that one gives it a drying-out period to yield a crisper finished result.Good tip! The plums and sugar and first introduced and allowed a time to draw juices from the fruit. Then all the rest combined together with some flour to thicken.<\/p>\n<p>[T]he plum filling goes into a buttered baking dish with the crumb topping sprinkled evenly over top. They still held up their firm snap of freshness, even cooked in this dessert, the deep rosemary and tang of vinegar and lemon only provided more cause for plum celebration. And the crunchy oat-spelt topping\u00e2\u20ac\u00a6well, future apples and pears can speak \u00e2\u20ac\u0153crisp-ly,\u00e2\u20ac\u009d too.<\/p>\n<p><strong>Plum-Rosemary Crisp with Oat-Spelt Topping<br \/>\nFrom Tandem Coffee and Bakery for Bon Appetite (www.bonappetit.com)<br \/>\nMakes 8 servings<\/p>\n<p>Filling<br \/>\n1 tablespoon unsalted butter, melted<br \/>\n3 pounds ripe plums, cut into wedges<br \/>\n2 teaspoons finely chopped rosemary<br \/>\n1 tablespoon plus \u00e2\u2026\u201c cup raw sugar or (packed) dark brown sugar<br \/>\n1 tablespoon apple cider vinegar<br \/>\n2 teaspoons finely grated lemon zest<br \/>\nPinch of kosher salt<br \/>\n3 tablespoons all-purpose flour<\/p>\n<p>Topping and Assembly<br \/>\n1 cup old-fashioned oats<br \/>\n3\/4 cup spelt flour<br \/>\n1\/4 cup raw sugar or (packed) dark brown sugar<br \/>\n1\/4 teaspoon kosher salt<br \/>\n1\/4 teaspoon ground cinnamon<br \/>\nPinch of ground cardamom<br \/>\n6 tablespoons unsalted butter, melted, slightly cooled<\/strong><\/p>\n<p><strong>Filling<\/p>\n<p>Brush inside of a shallow 2-qt. baking dish with butter. Toss plums, rosemary, and 1 Tbsp. raw sugar in a large bowl. Let sit, tossing once or twice, until plums release their juices, 15\u00e2\u20ac\u201c20 minutes.\u00e2\u20ac\u00a8<br \/>\nAdd vinegar, zest, salt, and remaining \u00e2\u2026\u201c cup raw sugar to plums and toss to combine. Sprinkle flour evenly over top and toss until flour is no longer visible.\u00e2\u20ac\u00a8<br \/>\nTransfer filling to prepared baking dish and spread out to make an even layer; set aside.\u00e2\u20ac\u00a8<\/p>\n<p>Topping and Assembly<\/strong><\/p>\n<p><strong>Preheat oven to 350\u00c2\u00b0. Whisk oats, spelt flour, raw sugar, salt,<br \/>\ncinnamon, and cardamom in a medium bowl. Drizzle butter over<br \/>\nmixture, tossing with a fork to incorporate. As soon as all the butter<br \/>\nhas been added, work with your hands until no dry spots remain and<br \/>\nmixture holds together in clumps. Scatter over a rimmed baking sheet<br \/>\nand let sit uncovered at room temperature until slightly dried out (this<br \/>\nwill help it crisp in the oven when baking), 10\u00e2\u20ac\u201c15 minutes.\u00e2\u20ac\u00a8<br \/>\nScatter topping evenly over reserved filling. Bake crisp on a foil-lined<br \/>\nrimmed baking sheet until topping is golden and crisp and fruit juices<br \/>\nare bubbling around the edges, 35\u00e2\u20ac\u201c45 minutes. Let cool at least 15<br \/>\nminutes before serving.\u00e2\u20ac\u00a8<br \/>\n\t<\/strong><br \/>\n<strong>Do Ahead: Topping can be made 2 days ahead; after drying out,<br \/>\ncover and chill. Crisp can be baked 8 hours ahead; let cool, then tent<br \/>\nwith foil.
