Sure, they look terribly inviting \u00e2\u20ac\u201d plump-soft cookie-cakes sealed together with a creamy filling\u00e2\u20ac\u00a6a whole lot to love. I had perhaps resisted in making them because they seemed too complicated or seemed to require more of a special occasion. But what I discovered is that they really are simple to make and, in fact, have a very humble history. <\/p>\n<p>The whoopie pie has American roots that have been credited to both New England and Pennsylvania\u00e2\u20ac\u2122s Amish country, according to \u00e2\u20ac\u0153<a href=\"https:\/\/amzn.to\/2RXto9r\" rel=\"noopener\" target=\"_blank\">The Oxford Companion to American Food and Drink<\/a>\u00e2\u20ac\u009d (2007). One theory is that the treat came about in the Great Depression, when some leftover cake batter was put to use for a new kind of dessert. Legend has it that when these cream sandwich cakes \u00e2\u20ac\u201d the originals were chocolate \u00e2\u20ac\u201d made it into children\u00e2\u20ac\u2122s lunch sacks, they yelled \u00e2\u20ac\u0153Whoopie!\u00e2\u20ac\u009d.<\/p>\n<p>[I]\u00e2\u20ac\u2122ve seen a lot more variations of whoopie pies recently, not just the usual chocolate with vanilla filling, but vanilla-on-vanilla, peanut butter and jelly, even apple cider. But the seasonal pumpkin version from \u00e2\u20ac\u0153<a href=\"https:\/\/amzn.to\/2S0cpn8\" rel=\"noopener\" target=\"_blank\">Baked: New Frontiers in Baking<\/a>,\u00e2\u20ac\u009d by Matt Lewis and Renato Poliafito (2008) on the <a href=\"http:\/\/bakedsundaymornings.com\/2018\/11\/13\/in-the-oven-pumpkin-whoopie-pies\/\" rel=\"noopener\" target=\"_blank\">Baked Sunday Mornings recipe schedule<\/a>, seemed the best way at my first foray at \u00e2\u20ac\u0153whoopie.\u00e2\u20ac\u009d <\/p>\n<p>Part of my enthusiasm for this came from seeing Renato Poliafito himself making this recipe on Food Network\u00e2\u20ac\u2122s \u00e2\u20ac\u0153The Kitchen\u00e2\u20ac\u009d as an alternative Thanksgiving dessert. Seeing the pretty little domed pumpkin cakes he created and sandwiched together with cream cheese filling got me motivated. The right whoopie at the right time.<\/p>\n<p><a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9218.jpg\"><img decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9218.jpg\" alt=\"\" width=\"500\" height=\"375\" class=\"alignright size-full wp-image-1866\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9218.jpg 500w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9218-300x225.jpg 300w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9218-150x113.jpg 150w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9218-400x300.jpg 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>[I] had to check the recipe in both the book and on the Baked Sunday Mornings printout a couple of times to be sure my eyes weren\u00e2\u20ac\u2122t deceiving me when I was mixing up the dry ingredients for the cookies\u00e2\u20ac\u201d two tablespoons of cinnamon, a tablespoon of cloves and a tablespoon of ginger? Oh my! When I pulled the cookies out of the oven, I found myself saying something I don\u00e2\u20ac\u2122t usually say when pulling things out of the oven: \u00e2\u20ac\u0153Oh, these are so cute!\u00e2\u20ac\u009d They were! Topping that with another cookie and pressing down, I thought this would be a fun project for kids. I ended up with about 24 completed whoopie pies, and planned on sharing some with friends as a pre-Thanksgiving treat.<\/p>\n<p><a href=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9255.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9255.jpg\" alt=\"\" width=\"500\" height=\"572\" class=\"alignright size-full wp-image-1877\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9255.jpg 500w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9255-262x300.jpg 262w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9255-131x150.jpg 131w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2018\/11\/IMG-9255-400x458.jpg 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>[T]hese little gems are so pretty\u00e2\u20ac\u00a6a platter of them would be more than festive enough for any Thanksgiving holiday table. And the taste \u00e2\u20ac\u201d the cookies are light and soft, moist and beautifully spicy, just sweet enough from rich dark brown sugar, and the filling is like the best cream cheese frosting, a tangy, buttery complement to these little cakes.
