Powdered (confectioner\u00e2\u20ac\u2122s) sugar is one\u00e2\u20ac\u00a6a fine dusting of this soft sweetness automatically tempers any sort of sweet \u00e2\u20ac\u201d even one as strongly warm-flavored as coffee or chocolate or cinnamon \u00e2\u20ac\u201d&nbsp; and on the tongue delivers a sense of cool.<\/p>\n\n\n\n<p>Citrus \u00e2\u20ac\u201d particularly lime \u00e2\u20ac\u201d is another. So it&#8217;s no wonder that a particular fine textured cookie, flavored with lime, key lime or a mix of citrus, was named a \u00e2\u20ac\u0153cooler.\u00e2\u20ac\u009d When I was growing up, these packaged shortbread-like cookies, redolent with a heavy dusting of powdered sugar and deeply lime-infused, melted in your mouth, and I knew of one individual who could polish off a box all on his own.<\/p>\n\n\n\n<p>[H]ere or there today, I still see versions of these cookies in the markets. And recipes for them, too. While I\u00e2\u20ac\u2122ll use any excuse to add citrus zest to anything, making a citrus cooler in the form of a cookie sparked the idea to do something else \u00e2\u20ac\u201d a Citrus Cooler Scone.<\/p>\n\n\n\n<p>[F]irst, I found a scone recipe that seemed malleable to this venture. Then, I aligned the taste elements I thought would work. It did take on the appearance of a rustically round scone \u00e2\u20ac\u201d or an enlarged cookie (whatever your preference).<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"643\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1344.jpg\" alt=\"\" class=\"wp-image-2298\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1344.jpg 500w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1344-233x300.jpg 233w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1344-117x150.jpg 117w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1344-400x514.jpg 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/figure>\n\n\n\n<p>[T]he scones baked up nicely, perfuming the kitchen with coconut and citrus. I resisted the urge to bite into one warm, and also decided not to roll&nbsp; them in powdered sugar before cooling, ala Mexican wedding cookie, to give them a thick dusting of the stuff. For scones, I thought, a lighter sprinkling of the confectioner\u00e2\u20ac\u2122s sugar made more sense.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"633\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1356.jpg\" alt=\"\" class=\"wp-image-2299\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1356.jpg 500w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1356-237x300.jpg 237w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1356-118x150.jpg 118w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/06\/IMG-1356-400x506.jpg 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/figure>\n\n\n\n<p>[A]fter the scones had cooled, I sieved some powdered sugar over them, giving them just enough of a snowy top to coat.<\/p>\n\n\n\n<p>While not the meltaway texture of a cooler cookie, these scones were tender, just slightly chewy from the coconut and not too sweet, even with the powdered sugar. A scone? Maybe even cooler.<\/p>\n\n\n\n<p><strong>Citrus Cooler Scones<\/strong><\/p>\n\n\n\n<p>Makes 6 scones<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>1 1\/4 all-purpose flour<\/strong><\/li><li><strong>1\/4 cup coconut flour<\/strong><\/li><li><strong>1\/3 cup light brown sugar<\/strong><\/li><li><strong>1 1\/2 teaspoons baking powder<\/strong><\/li><li><strong>1\/4 teaspoon salt<\/strong><\/li><li><strong>1\/4 cup cold, unsalted butter, cut into cubes<\/strong><\/li><li><strong>Zest of one lime<\/strong><\/li><li><strong>Zest of one lemon<\/strong><\/li><li><strong>1\/3 cup fine flaked unsweetened coconut<\/strong><\/li><li><strong>1\/2 cup chopped white chocolate (or chips)<\/strong><\/li><li><strong>2 tablespoons lime or lemon juice (or a combination)<\/strong><\/li><li><strong>1\/4 cup milk<\/strong><\/li><li><strong>1 egg<\/strong><\/li><li><strong>1 teaspoon vanilla extract<\/strong><\/li><li><strong>Confectioner\u00e2\u20ac\u2122s sugar for topping<\/strong><\/li><\/ul>\n\n\n\n<p>Heat oven to 375. Combine flours, sugar, baking powder and salt in the food processor. Pulse to blend. Add butter and pulse several times until the mixture resembles coarse crumbs.<\/p>\n\n\n\n<p>Add zest, coconut and chocolate and pulse a few times to combine. Whisk citrus juice, milk, egg and vanilla in a measuring cup with a fork. Slowly add to flour mixture by pouring through the feeding tube of the food processor and pulsing until the mixture just forms a crumbly dough.&nbsp;<\/p>\n\n\n\n<p>Form dough into six balls (about 1\/3 cup each). Place balls on a large parchment-lined baking sheet. Flatten each ball slightly on top with your fingers, so each scone is about 2-1\/2 inches wide.&nbsp;<\/p>\n\n\n\n<p>Bake scones for 18 to 20 minutes or until light golden brown. Place on a wire rack to cool.
