Why don\u00e2\u20ac\u2122t I make more muffins? After all, they are easy (even kids can stir them up) and come together quickly. In a matter of moments you can have a batch in the oven \u00e2\u20ac\u201d and out \u00e2\u20ac\u201d in a relatively short baking time.<\/p>\n\n\n\n<p>The Baked Sunday Mornings recipe roster is getting me reacquainted with my fondness for and experience with home-baked muffins, with last month\u00e2\u20ac\u2122s Orange Almond Blueberry Muffins, and this month\u00e2\u20ac\u2122s Banana Espresso Chocolate Chip Muffins (recipe: <a href=\"http:\/\/bakedsundaymornings.com\/2019\/07\/05\/in-the-oven-banana-espresso-chcolate-chip-muffins\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">http:\/\/bakedsundaymornings.com\/2019\/07\/05\/in-the-oven-banana-espresso-chocolate-chip-muffins\/<\/a>), both from Matt Lewis\u00e2\u20ac\u2122 and Renato Poliafito\u00e2\u20ac\u2122s \u00e2\u20ac\u0153Baked: New Frontiers in Baking\u00e2\u20ac\u009d (2008).&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"600\" height=\"800\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2264.jpg\" alt=\"\" class=\"wp-image-2304\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2264.jpg 600w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2264-225x300.jpg 225w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2264-113x150.jpg 113w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2264-400x533.jpg 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n\n\n<p>[N]ot only do I love any excuse to make muffins, I also I love having a reason to break out the espresso powder and infuse something with it (as well as add a caffeine kick to my baked goods). The combination here of banana, espresso and chocolate seemed unusual and intriguing to me, so I was anxious to try this recipe.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"600\" height=\"756\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2261.jpg\" alt=\"\" class=\"wp-image-2305\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2261.jpg 600w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2261-238x300.jpg 238w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2261-119x150.jpg 119w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2261-400x504.jpg 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n\n\n<p>[I] did tinker with the recipe a bit, mainly adding a few things. For some reason, toasted pecans seemed to speak to me as something that would lend a bit of additional rich flavor and a crunch to the texture. I ended up using about 1\/2 cup (folded in at the end).<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"802\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2266.jpg\" alt=\"\" class=\"wp-image-2306\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2266.jpg 600w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2266-224x300.jpg 224w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2266-112x150.jpg 112w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2266-400x535.jpg 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n\n\n<p>[I] also added a couple of pinches of cinnamon to the dry ingredients (that included the espresso). This recipe filled about 34 mini muffin cavities, and I probably could have gotten 36 had I filled them a little less.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"759\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2284.jpg\" alt=\"\" class=\"wp-image-2312\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2284.jpg 600w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2284-237x300.jpg 237w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2284-119x150.jpg 119w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2284-400x506.jpg 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n\n\n<p>[I]t took about 15 minutes for these to bake completely (I have a slow oven). They were a beautiful dark golden-brown, and after I let them cool a bit, they released easily from the pans.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"774\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2332.jpg\" alt=\"\" class=\"wp-image-2314\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2332.jpg 600w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2332-233x300.jpg 233w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2332-116x150.jpg 116w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2019\/07\/IMG-2332-400x516.jpg 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n\n\n<p>[I]\u00e2\u20ac\u2122ve never been a huge fan of banana and chocolate together (like chocolate chips in banana bread or fudge frosting on banana cake), but I think the espresso powder flavor element helps tie everything together here. These little gems were moist and flavorful (and as I noticed as I put part of them away to store for later, smelled outstanding), and I do think the crunch of the pecans (or walnuts or your favorite nut) was a good decision.
