Just a few ingredients (usually a basic blend of butter, sugar flour and salt), it\u00e2\u20ac\u2122s easy to make and despite its simplicity, rewards with rich flavor and isn\u00e2\u20ac\u2122t too terribly sweet. It\u00e2\u20ac\u2122s virtually fail-proof, too. I\u00e2\u20ac\u2122d say over-baking is the biggest risk to good shortbread, which benefits from ending up just barely golden-brown and a bit underdone, securing its tenderness and taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Basic shortbread can also be a palette for a wide array of variations. I\u00e2\u20ac\u2122ve made a delightful lavender shortbread (see my blog post of June 2014: https:\/\/www.womansconed.com\/?p=694), using fine-textured rice flour and dried flower buds to infuse delicate flavor. And an annual Christmas favorite is Art Smith\u00e2\u20ac\u2122s Pecan Shortbread (see my blog post of December 2013: https:\/\/www.womansconed.com\/?p=694), a slice-and-bake cookie made even more rich and delicious with finely chopped pecans and a hint of cinnamon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I understand how easily and effectively shortbread can take on a range of flavors, so I was eager to try a new variation in a recipe I found from Real Simple magazine.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"700\" height=\"933\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/06\/IMG-9740.jpg\" alt=\"\" class=\"wp-image-2775\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/06\/IMG-9740.jpg 700w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/06\/IMG-9740-225x300.jpg 225w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/06\/IMG-9740-113x150.jpg 113w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/06\/IMG-9740-400x533.jpg 400w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">[L]emon-Chamomile Shortbread sounded like the perfect light cookie for the warming days. I love the subtle flavor and calming effects of chamomile tea and drink it almost nightly. For this recipe, this easy-to-handle dough is then pressed evenly into an 8-inch square cake pan (I lined mine with parchment for even easier removal). Not all recipes require this, but many do, as this one did. And the cutting involved a twist for these cookies, where squares are cut first, then the squares are cut into triangles\u00e2\u20ac\u00a6a unique but ideal (for dunking) cookie shape. Perfect for teatime or as a side to a fruit dessert (like the rhubarb compote I served mine with\u00e2\u20ac\u00a6see blog post of May 2020: https:\/\/www.womansconed.com\/?p=2734), this shortbread is too easy \u00e2\u20ac\u201d and too delicious \u00e2\u20ac\u201d not to try.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lemon-Chamomile Shortbread<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>From Real Simple magazine<\/strong> (<a href=\"http:\/\/www.realsimple.com\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">www.realsimple.com<\/a>)<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>1 cup (2 sticks) unsalted butter (softened at room temperature)<\/strong><\/li><li><strong>&nbsp;\u00c2\u00bd cup sugar<\/strong><\/li><li><strong>&nbsp;\u00c2\u00bc teaspoon salt<\/strong><\/li><li><strong>&nbsp;Grated zest from 1 lemon<\/strong><\/li><li><strong>&nbsp;1 teaspoon loose chamomile tea<\/strong><\/li><li><strong>&nbsp;2\u00c2\u00bc cups all-purpose flour<\/strong><\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Heat oven to 325\u00c2\u00b0 F. Combine the butter, sugar, and salt in a mixer and beat until light and fluffy. Blend in the lemon zest, loose tea, and flour until smooth. Press into an 8-inch square cake pan.&nbsp;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bake 30 minutes or just until the shortbread begins to turn golden. Cut into 9 squares, then cut each square into 2 triangles.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cool completely on a wire rack.
