It is pure summer. In July this year, you didn\u00e2\u20ac\u2122t see much corn out and about, but recently I was treated to it calling to me from robust bins in the grocery store. I\u00e2\u20ac\u2122d picked out a recipe, scones made with cornmeal and flecked with chopped rosemary and lemon zest. And a new scone recommendation for late summer, a sweet-salty accompaniment at tea or anytime when the comfort of corn is needed.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"750\" height=\"965\" src=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/08\/IMG-6277.jpg\" alt=\"\" class=\"wp-image-2899\" srcset=\"https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/08\/IMG-6277.jpg 750w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/08\/IMG-6277-233x300.jpg 233w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/08\/IMG-6277-117x150.jpg 117w, https:\/\/www.womansconed.com\/wp-content\/uploads\/2020\/08\/IMG-6277-400x515.jpg 400w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Corn Rosemary Scones<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Adapted from \u00e2\u20ac\u0153The Totally Teatime Cookbook\u00e2\u20ac\u009d by Helene Siegel and Karen Gillingham (Celestial Arts: 1995)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Makes 10 to 12 Scones<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>2 cups all-purpose flour<\/strong><\/li><li><strong>1\/2 cup yellow cornmeal<\/strong><\/li><li><strong>2 teaspoons baking powder<\/strong><\/li><li><strong>2 tablespoons sugar<\/strong><\/li><li><strong>1\/2 teaspoon salt<\/strong><\/li><li><strong>6 tablespoons butter, cold and cut into 1\/4-inch slices<\/strong><\/li><li><strong>2 teaspoons grated lemon zest<\/strong><\/li><li><strong>1 teaspoon fresh chopped rosemary<\/strong><\/li><li><strong>1 egg<\/strong><\/li><li><strong>3\/4 cups half-and-half<\/strong><\/li><li><strong>3\/4 cup fresh corn kernels (optional)<\/strong><\/li><li><strong>1 egg, beaten, and confectioner\u00e2\u20ac\u2122s sugar for glaze<\/strong><\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Preheat oven to 400\u00c2\u00b0F.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In large mixing bowl, combing flour, cornmeal, baking powder, sugar and salt. Mix with fork. Add butter and blend with fingertips or pastry blender until butter is evenly mixed in chunks. Blend in lemon zest and rosemary.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Beat egg in small bowl with half-and-half. Pour into flour mixture and stir with wooden spoon. Fold in corn kernels. Turn out onto floured board and lightly knead. Roll or pat to form 12-inch circle.using fluted or plain 3-inch cookie cutters, cut out dough. Transfer to a baking sheet lined with parchment paper and brush tops with egg. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Re-roll scraps and cut remaining dough. Bake 10 minutes, remove from oven, generously sift confectioner\u00e2\u20ac\u2122s sugar over tops and bake 5 minutes longer.
